Mini Macaroni & Cheese Pot Pies
Difficulty: Easy • 4 servings • Total Time: 35 minutes
Ingredients:
- 2 cups Bob Evans Macaroni & Cheese, divided
- 1 pie crust
- 1 egg, beaten
Directions:
- Preheat oven to 350ºF. Grease 4 ramekins.
- Prepare the Bob Evans Macaroni & Cheese according to package directions.
- On a floured surface, roll out the pie dough to about ¼” thickness.
- Cut the crust into 8 circles: 4 the size of the ramekin and 4 slightly larger.
- Press one of the larger circles into each ramekin, pressing up the sides to cover completely.
- Fill each cup with ½ C Bob Evans Macaroni & Cheese.
- Add the remaining crusts on top. Crimp the edges of both crusts together to seal.
- Use a knife to create four slits in the middle of each crust, then brush with the beaten egg.
- Bake for 25-30 minutes, until the top is golden brown.
Mashed Potato Stuffed Meatballs
Difficulty: Medium • 4 servings • Total Time: 40 minutes
Ingredients:
- 1 ½ cups Bob Evans Original Mashed Potatoes, prepared and cooled
- 1 lb lean ground beef
- 1 egg
- ½ cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 1 tsp salt
- 1/2 tsp black pepper
- Swedish style gravy, to serve
- parsley, for garnish
Directions:
- Preheat the oven to 375ºF and line a baking sheet.
- In a medium bowl, combine the ground beef, breadcrumbs, garlic, onion, parsley, salt and pepper. Mix well.
- Divide the meat mixture into roughly 18-20 equal portions.
- Roll each portion into a ball, then flatten.
- Add a spoonful of mashed potato to the center of each, and form the meat up over the sides to cover completely, shaping back into a ball.
- Arrange the stuffed meatballs on the sheet with space between them, and bake for 25-30 minutes, until cooked through.
Mashed Potato Waffle Stack
Difficulty: Medium • 6 servings • Total Time: 2o minutes
Ingredients:
- 2 cups Bob Evans Original Mashed Potatoes, prepared and cooled
- 2 eggs
- ½ cup all-purpose flour
- ½ cup cheddar cheese, shredded
- 1 1/2 Tbsp chives, chopped, divided
- sour cream, to serve
Directions:
- Preheat In a large bowl, combine the Bob Evans Original Mashed Potatoes, eggs, cheese, and 1 Tbsp of chopped chives. Stir well to combine.
- Heat a waffle iron and coat with nonstick spray.
- Ladle in enough of the potato mix to fill, then close the lid and cook until golden and crispy, about 2-3 minutes.
- Serve hot with sour cream and more chives on top.
Macaroni & Cheese Stuffed Meatloaf
Difficulty: Easy • 8 servings • Total Time: 70 minutes
Ingredients:
- 1 ½ cups Bob Evans Macaroni & Cheese, prepared
- 1 ½ lb lean ground beef
- 1 cup breadcrumbs
- ½ cup milk
- 2 Tbsp Worcestershire sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 tsp salt
- ½ tsp black pepper
For the glaze:
- 1 cup ketchup
- 1/4 cup light brown sugar
- 1 Tbsp Worcestershire sauce
- 1 Tbsp red wine vinegar
- 2 cloves garlic, minced
- ⅛ tsp salt
Directions:
- Preheat the oven to 350ºF and grease a loaf pan.
- To make the glaze: whisk together all glaze ingredients until well combined.
- In a large bowl, mix together the ground beef, breadcrumbs, milk, Worcestershire sauce, the herbs, salt, and pepper until homogenous.
- Divide the meat mixture in thirds. Add two thirds to the bottom of the loaf pan, and press into the bottom and up along the walls of the pan.
- Fill the center with the prepared Bob Evans Macaroni & Cheese, then use the remaining meat to cover the top, sealing well.
- Pour half of the glaze over the loaf, then place in the oven to bake uncovered for 45 minutes.
- Remove the pan from the oven and increase the temperature to 400ºF. Pour the remaining glaze over top, then cook an additional 15 minutes. Let rest before serving.
Cornbread and Mashed Potato Swirl Bake
Difficulty: Medium • 10 servings • Total Time: 3 hours
Ingredients:
- 2 cups Bob Evans Original Mashed Potatoes, prepared
- 1 loaf frozen bread dough, thawed
- 1 box cornbread muffin mix, divided
- ¼ cup milk
- ½ cup all-purpose flour
- ¼ cup unsalted butter, melted
- 2 cloves garlic, minced
- 1 tsp dried parsley
- 1 tsp salt
Directions:
- Proof the frozen bread dough according to package instructions.
- Grease a 9” x 13” dish.
- Whisk together half of the cornbread mix and the milk. Combine the melted butter, garlic, parsley, and salt.
- Punch down the proofed dough, and knead in the cornbread mix. Gradually add the flour until the dough is workable.
- On a heavily floured surface, roll out the dough into a rectangle. Spread out the remaining cornbread mix inside a large baking sheet, and transfer the dough onto it.
- Spoon the Bob Evans Original Mashed Potatoes on the dough in an even layer. Brush with half of the garlic herb butter.
- Carefully roll into a log. Use unflavored floss or a greased knife to slice into rolls about 1.5” thick.
- Arrange the rolls in the greased dish. Brush with half of the remaining herb butter, cover, and proof in a warm place until doubled, at least 45 minutes.
- When risen, brush with the last of the butter, and bake at 350ºF for 35 minutes, until golden brown.
