Marshmallow B-Day Cakes

Difficulty: Easy • 6 Servings • Total Time: 25 Minutes

Ingredients:

  • 6 marshmallows
  • 1 cup white candy melts, melted
  • ¼ cup rainbow sprinkles
  • ½ cup purple royal icing

Directions:

  1. Add a cake pop stick to a marshmallow through the bottom. 
  2. Submerge completely into white candy melts.
  3. Using a spoon, add rainbow sprinkles around the bottom of the marshmallow.  Refrigerate until it hardens. 
  4. Pipe purple royal icing on the top of the marshmallow, allowing some to drip over the side. Let dry. Repeat steps 1-4 with remaining ingredients. 
  5. Add a small birthday candle to each, and enjoy!


Bunny Cookie Pops

Difficulty: Easy • 5 Servings • Total Time: 25 Minutes

Ingredients:

  • 5 marshmallows
  • ¼ cup pink nonpareils
  • 5 Oreos
  • 5 pink M&Ms
  • 1 cup white candy melts, melted
  • 3 Tbsp black candy melts, melted
  • pink luster dust

Directions:

  1. Cut the marshmallows in half diagonally. 
  2. Dip the sticky side of each half in the pink nonpareil sprinkles. 
  3. Add a cake pop stick through the middle of each Oreo. 
  4. Dunk the Oreos in white candy melts, and refrigerate until hardened. If needed, dip a second time so that the cookie is fully coated. 
  5. Dip the bottom end of the marshmallow halves in the white candy melts and stick on the cookie pop near the top, with the pink side facing forward. 
  6. Stick a pink M&M in the middle of an Oreo pop. Pipe eyes with black candy melts and paint cheeks using luster dust. 
  7. Repeat with the rest of the cookies and enjoy!

Marbled Marshmallows

Difficulty: Easy • 8 Servings • Total Time: 20 Minutes

Ingredients:

  • 1 ½ cups white chocolate, melted
  • Oil-based food coloring
  • 8 marshmallows

Directions:

  1. Add a few drops of food coloring, use a skewer stick to swirl so that there is a tie dye effect on the chocolate. Be sure to not over mix so the colors don’t blend together. 
  2. Add a cake pop stick to each marshmallow and dip in the tie dye chocolate. Let set in the refrigerator, then serve and enjoy your marbled marshmallows!

Blue Sky Latte

Difficulty: Medium • 2 Servings • Total Time: 25 Minutes

Ingredients: 

For the marshmallow:

  • 3 Tbsp gelatin
  • ½ cup sugar
  • 1 Tbsp corn syrup
  • 1 tsp vanilla extract
  • Cornstarch

For the latte:

  • 1 cup water 
  • ¼ C blue butterfly pea flower
  • 1 cup milk 

Directions:

  1. To make the marshmallow: hydrate the gelatin in a small amount of warm water. 
  2. Combine sugar, corn syrup and vanilla extract in a saucepan and heat over medium until it reaches 232°F.
  3. Pour both the sugar syrup and gelatin mixture into the bowl of a stand mixer. Mix at high speed until it puffs up and cools. 
  4. Pour the mixture into a square silicone mold sprinkled with lots of cornstarch and let set. 
  5. Using a cookie cutter, cut cloud shapes out of the marshmallow, and stick them to the inside of two tall glasses. 
  6. To make the latte: heat water and infuse with blue butterfly pea flowers. 
  7. Add ice to the glasses. Pour milk to fill about ¾ of each glass. Add blue butterfly infusion on top to reveal the clouds, and enjoy!
