Directions:

  1. First, make the filling. Place all vegetables in the Bella Air Fryer basket and coat with the soy sauce, vinegar, and sesame oil. Cook for 20 minutes, shaking every 5 minutes. Let the filling cool slightly before the next step.
  2. Brush sides of each flour tortilla with egg, then add a scoop of the veggie filling and a small handful of shredded cheese in the center. Fold in half, then use a fork to seal and score the edges of the empanada.
  3. Place inside the Bella Air Fryer basket and fry for 10 minutes.
  4. Let cool slightly, then serve. We like them with salsa!
