Egg Roll Sushi

  1. To make the tuna rice balls: In a bowl mix canned tuna, sushi rice, sesame oil, cucumber and sesame seeds.
  2. Make bite-sized balls with the mix, approximately 2 Tbsp each.
  3. To make the egg wrap: Place the nori seaweed strips on a lightly oiled pan on medium heat, leaving space between them. You may need to work in batches.
  4. Pour some of the whisked egg over each strip and allow to cook.
  5. Once cooked through, add a tuna rice ball to the center of each egg, and roll using chopsticks. Serve with soy sauce and enjoy!

Sushi Wrap

  1. To make the spicy tuna: Mix ahi tuna with mayonnaise and sriracha in a bowl.
  2. To make the sushi wrap: Cut nori seaweed sheet halfway through from the center to the bottom.
  3. Place the poached egg in the bottom left corner of the nori.
  4. Place sushi rice in the top left and top with black sesame seeds.
  5. Place spicy tuna in the top right.
  6. Place cucumber slices on the bottom right.
  7. Fold the bottom right corner of the nori seaweed sheet upward, then to the left, then down creating a sushi wrap. Serve and enjoy with soy sauce.

  1. Add your ham, Swiss cheese, roasted tomatoes, zucchini, arugula, and bacon to the bottom half of your focaccia bread.
  2. Drizzle with olive oil and balsamic glaze.
  3. Replace the top half of your focaccia bread.
  4. Cut your sandwich into eight square portions with a serrated knife. Serve and enjoy!

Watermelon Mezcalita

  1. Slice across the bottom of a round watermelon to create a flat base. Be careful not to cut too deeply, just remove a small amount of the rind.
  2. Cut across the top of the watermelon, creating a removable lid.
  3. Insert an immersion blender inside the watermelon and pulse at medium speed.
  4. Add mezcal, salt, lime juice and half of the ice.
  5. Replace the “lid” and secure with rubber bands for travel. When ready to serve, ladle into ice filled glasses, and enjoy!

Mason Jar Cheesecake

  1. Place lemon sandwich cookies inside a Ziploc bag and crush.
  2. Add a splash of warm water if the crumbs are too dry, then spoon into the bottom of three mason jars.
  3. Beat the cream cheese and condensed milk in a bowl for 5 minutes.
  4. Juice and zest lemons into the mixture and combine.
  5. Fill the mason jars with the cream cheese mix and top with more lemon zest.
  6. Cover and refrigerate for 4-5 hours. Enjoy!

Chocolate Sun Fondue

  1. Place chocolate bars over an aluminum tray and use a magnifying glass to reflect the sunlight onto them until melted, about 10 minutes.
  2. Arrange wafer cookies, pretzels, apple slices, grapes and strawberries in another tray.
  3. Dip your snacks in the melted chocolate, and enjoy!
